Royal icing is the hard white icing usually found on Christmas and
wedding cakes. It becomes really hard once it sets and, as a result,
can be great for making edible flowers, decorating cookies, and writing
or making lines on your cake. It is the most popular icing when icing
cookies because it is great for decorative details and holds its shape
when stacked. Warning: You don’t want to make your royal icing very
thick because it could become too hard to eat.
